Crab and Clam Stuffed Avocados
Ingredients:
* ½ red bell pepper, seeded and finely diced
* ½ green bell pepper, seeded and finely diced
* ½ red onion, peeled quartered and thinly sliced
* ¼ fresh lime juice
* 1 tsp. ground cumin
* ¼ cup fresh cilantro, finely chopped
* ½ cup mayonnaise
* 1 25 oz. can chopped sea clams, well drained
* 10 oz. jumbo lump crab meat, well drained, OR Imitation Crab, flaked
* 4 ripe avocados, pitted and halved
* 3 limes, quartered for garnish
Directions:
1. In a large bowl, mix first 7 ingredients together well.
2. Gently fold in the chopped clams and crab meat.
3. Cover and refrigerate for at least 1 hour.
4. Scoop ½ cup of crab and clam salad into avocado half.
5. Serve with lime wedge.
Serves 4
