
The difference between green onions and scallions? It is the same thing! Generally speaking however, the scallion is the greener end of the green onion. When a recipe calls for one or the other, just use the whole green onion.

What about chives? There is a difference between green onions and chives, but I think it comes down to personal preference. Chives are a bit milder in taste, are more slender than green onions, and there is no white bulb. Chives are considered more of an herb. But they are so close that I just stick with green onions.
